Zucchini Bran Muffins

Hearty, wholesome and lightly sweetened, these are a great addition to the lunchbox or breakfast table!

Makes about 25
1 cup whole-wheat flour
½ cup spelt flour
1 ½ cups wheat or oat bran
¼ cup psyllium husk fibre
1 tsp egg replacer
½ tsp salt
4 tsp baking powder
2 tsp pumpkin pie spice
2 tbsp ground flax seed
3 tbsp canola oil
2 tbsp camelina oil
¼ cup maple syrup
¼ tsp liquid stevia
1 ½ cups unsweetened flax or other non-dairy milk
1 tbsp vinegar
1 cup shredded zucchini
½ cup sunflower seeds
2 tbsp hemp seed

Preheat oven to 375F.
Combine flours, bran, psyllium, egg replacer, salt, baking powder, spice and flaxseed; set aside. In a large bowl, beat oils, maple syrup, stevia, milk and vinegar.
Add dry ingredients and stir to just combine, then add the zucchini and seeds and stir in to combine. Do not overmix!
Bake 15 to 20 minutes, until toothpick inserted in center comes out clean
